having a large blob of data which is at least 100 GB long and is known to be encrypted by a symmetric encryption algorithm, is it possible to deduce the exact name of the encryption algorithm? if not, can we make a heuristic guess which will point to the used encryption algorithm with more than 1/N probability where N is the number of all possible symmectric algorithms?

Isn't ciphertext expected to be indistinguishable from randomness? If so, I'd say no.

with probability of over 50% the algorithm is AES :]

if the bytes in the blob are not randomly distributed, it's probably some very bad encryption
