Personally I favour ejabberd, but I gather Prosody is quite popular these days.

Another vote here for ejabberd for a new server, but there's nothing wrong with choosing prosody at all. I just find ejabberd is less work out of the box right now. I run the version from debian backports on a couple of live servers and it's perfectly solid.

I originally chose Prosody, rather than ejabberd because the existence of an ejabberd "Business Edition", as opposed to the "Community Server", made me nervous about the open-sourceness of future features.

The additional features of the Business Edition are mostly just interesting to commercial, closed services (built-in support for push notifications which is only useful if the server operator controls the clients, stuff like that).

Apart from those it's just an old (er, "stable") revision of the GPL code 😉
