I prefer Conversations FWIW. They're both open source so you can't go wrong either way, I suppose.

So what's the ratio of Prosody vs. Ejabberd deployments among the operators in this group? Is there a trend or preference, one way or the other? Pardon me if this has been recently asked in here. I'm a newcomer.

Still a couple small issues to work out mostly when I install new extensions and enable in configuration they're not being found. I'll fix it later on after work, should be able to work out pretty easily it'll just be permissions issues or something I imagine.
