    What I want to do is disable tls of prosody and use hitch to go from 5223 to 5222. This will work right?

    Yes, but you will want/need https://modules.prosody.im/mod_secure_interfaces

    Because Prosody will see an unencrypted stream, and won't know it's actually encrypted

    mod_secure_interfaces can tell it to treat connections on e.g. localhost (or wherever your proxy is located) as encrypted ones
